So I've gotten rid of the white food in my house, just as Dr. Oz advised. (Yes, I currently think he's the smartest man alive...) It hasn't been completely difficult, omitting these pantry items, and it's not like I've gone completely cold turkey yet on avoiding them at all costs... some day maybe. I mean, I'd still like to go out and eat other people's food without being completely snobbish and turning down something that may use enriched white flour or sugar. I figure, if I'm without it 95% of the time, that should still improve my health considerably... I'm no doctor though. Giving these things up does come at a price. Quite literally, really. It does take more of my time; I've been doing a lot of experimenting with different ingredients; But I enjoy doing that, so it's a price I'm willing to pay. But it is also true that the local Sam's Club doesn't carry giant bags of spelt flour or truvia! The lack of truvia there is still hard on me, I mean, its PRETTY well known by now, it's time to branch out Sam's Club... but I digress. Buying 5 different types of flour and then using it, without even knowing for sure that you will end up with something edible, can be stressful, but I have to think that it will, honestly, be worth it in the long run. It's not a diet, it's a lifestyle, and it's one that I'd like to express to my little gals as they grow. That being said, I made my daughter G, my husband J, and myself some pancakes the other morning and we all enjoyed them... so I thought I'd share! Here goes.
Spelt Pancakes
1 c spelt flour
1/2 c oat flour
1/2 c rice flour
1/4 c buckwheat flour
2 tsp cinnamon
1 tsp salt
4 tsp baking powder
2 packets truvia
2 tbsp light musclemilk (or your protein of choice--but watch the cholesterol in that stuff!)
2 c almond milk, unsweetened (that's just my personal choice due to sugar intake, but milk works too!)
1/2 c sweet potato puree (thanks to Jerry Seinfeld's wife ;-)
I also tossed in some vanilla extract, but I didn't measure... maybe a tbsp or so?
I generally eat my pancakes plain without syrup (especially when I put the sweet potato puree in them) because they are already moist and delicious. But I know some would say that's "Un-American." Ha. I have read about using pure maple syrup and coconut oil. I have bought those two ingredients, but not experimented yet, so I'll get back to you on that. And when I say "you," I mean that ONE person that somehow accidentally ended up on my blog and can't find their way out...
That being said, I don't plan on this being a "food blog" necessarily. I'm not sure what it'll be. There is much that I'll probably leave out, because I'm kind of private like that, but I figured... hey. EVERYone else has a blog, why not me? Blogs really aren't that exciting, but people seem to love them. So I thought "I can probably be not that exciting! And maybe people will love it!" We shall see.
