I woke up on Sunday wanting biscuits and gravy. b&g was a staple at our household; I mean, we didn't have it everyday or even weekly, but it was not completely uncommon to wake up to that wonderful aroma. Come to think of it, maybe my parents made it, just so I would get my butt out of bed... well, anyways. Yesterday, I was determined to have my b&g. But here's the thing... as I've mentioned, I'm trying my best to limit the white flour in my life so there go the biscuits... and I haven't had regular cow's milk in many months, due to limiting my sugar intake, but I DO however have a wide array of substitutions in my fridge... so I got creative. Well, my creativity on the biscuits wasn't that ingenious, I just used spelt flour instead of AP flour... and I actually used this recipe. They were flaky and DELISH biscuits...

So the biscuits were super easy to make, and really, so is gravy... but I had a little problem when I opened the freezer... I had NO sausage. My heart sunk. It'd been set on this. So in my freezer, there is: chicken... mahi mahi... steaks... all the standard stuff, but nothing for gravy. But wait, there is another meat in a tube! Turkey Chorizo?!?
In all honesty, this sounded horrible. But I was so fired up to make b&g, that I went for it... I browned the chorizo, added some spelt flour, and then continued by slowly adding in... rice milk? In my head, this breakfast just kept getting worse and worse... I mean, there is no way that rice milk is going to thicken and create something wonderful with this mexican spicy sausage... but there was no turning back. But surely enough, it thickened! Yet, instead of a beautiful creamy white gravy, I've got a pan full of brownish-orange sauce that is not all that inviting. But again, I've gotta go for it. So my biscuits are ready, I grab a plate, split open a biscuit, and spread on (perhaps a little less than normal) gravy and dig in...

it was AMAZING!
Spicy yes, but wow, so good! I was so afraid to take that first bite! I probably ate it way too fast, fearing it was a dream and I'd wake up to some nasty goopy sausage milk... but if it was a dream, well, then I'm still in it.
SO excited with myself, I text my parents to share the news of our family classic... and I should've known. I'm not a "genius" for no reason.... my parents have already tried it!! They tried it, and they kept it locked up in their vault of "secret delicious foods we won't tell our children about"....
My parents are so amazing. They must've passed on their "amazingness" to me... hehe ;-)
